Food As Farmacy will host its Beef and Berries harvest event at Castle Rock Ranch on Oct. 3, an afternoon combining a ranch tour, an elderberry foraging walk and a farm-sourced meal. The series was founded by naturopathic physician Dr. Casey Carr, who pairs farmers with physicians around a shared goal: human health.
The day starts with a tour of Castle Rock Ranch led by owners Albert Walsh and Jordan Shay, who will explain their regenerative agriculture practices along the Coeur d’Alene River. Dr. Carr then leads a hands-on elderberry walk covering identification, harvest and preparation, with recipes attendees can try at home. The afternoon ends with a family-style lunch built around the ranch’s pasture-raised beef and seasonal harvest flavors, served on the pastures guests just toured.
